A Recipe Book for Real Food Lovers

11 recipe books are stacked up in my kitchen, yet only one book is getting the most use once I started on the journey of eating wholesome meals – Lisa Leake’s 100 Days of Real Food.  I know Runner’s World Meals on the Run is filled with good-for-you recipes, unfortunately I haven’t been inspired to try any one of them, although I feel it deserves another look.  In fact, I probably should go through all these cookbooks and pick a recipe or two to try.  But lately, I found myself coming back to Lisa Leake’s book for quick and simple dinner recipes I know is good for my family and at the same time, they will find tasty and satisfying.

I first found out about 100 Days of Real Food a few years ago when I was looking for lunch ideas to pack for my daughter’s first year in preschool.  Back in 2010, after reading Michael Pollan’s book In Defense of Food, Lisa Leake along with her family decided to pledge to cut out all processed and refined foods for 100 days.  This is how she started her blog and four years later, her book 100 Days of Real Food was published and became a #1 New York Times Bestseller.  You can read more about her story: 100daysofrealfood.com

The recipe book contains two parts – Part 1 discusses the plan of action for eliminating processed foods in your diet.  It takes work to follow the plan especially when it comes to my kid’s snacks but one tip I like to follow is to read the ingredient label and try to stick to packaged foods with five or less unrefined ingredients.  Not an easy task.  Part 2 is my favorite part which contains the recipes – breakfast, lunch, snacks, salads, treats and of course dinner where many of the recipes I’ve cooked and cooked again.

These are 5 of my favorite recipes:

  1.  The Best Pulled Pork in the Slow Cooker – I’ve made this pulled pork at least three times in the past couple of months and it’s actually what we had for dinner on Thursday.  Very simple to make with 6 spices combined and a mixture of honey, red wine vinegar and olive oil.  I like the scent and flavor of smoked paprika so I use it instead of the plain paprika.  Good in a warm corn tortilla (we love the Trader Joe’s brand) topped with shredded lettuce, red onions, cilantro, avocado and queso fresco.  And tastes great as it is with a vinegar coleslaw and black bean, mango salad.

2. Simple Seafood – our favorite easy to cook seafood dish is Grilled Salmon and my husband does a great job making it. I, on the other hand do not have the same skills on the grill so I resort to cooking fish on the stovetop. This recipe is for a mild white fish such as cod. Another easy one to make in less than 20 minutes with a sauce base of white wine and lemon.

3.  Whole Wheat Spaghetti and Meatballs – Our menu for this week will include this one!  The girls love spaghetti and they like the meatballs as well.  The soy sauce and vinegar seasoning added to the meat makes it one flavorful dish.

4. Vegetarian Chili – I usually have all the ingredients available (onion, bell pepper, corn, diced tomatoes, kidney beans and spices) so when I want something quick and easy to make, this is my go-to recipe. There’s always enough leftover for lunch – it’s what I packed a couple of days ago when I took the kids to the New Children’s Museum.

5.  Homemade Chicken Nuggets – what kid does not love chicken nuggets?  I made a batch for my girls but I think the paprika may have been too strong of a spice for them.  I need to make this recipe again and adjust the spices to find the right blend my girls would like.  I loved them though, definitely better than the store-bought type.

These are just five of the 50+ dinner recipes included in the book.  So many more to try and I have a feeling most of them will be a hit with my family.
